Wings is a popular game day snack. Preparing BBQ wings typically involves seasoning the wings, followed by grilling them to achieve a desirable texture and flavor profile. The final step of basting with BBQ sauce is crucial, as it not only adds flavor but also contributes to the overall appearance and moisture of the wings.
When grilling wings, heat your grill to 400°F (200°C). This temperature range allows for even cooking while ensuring that the skin becomes crispy. I personally, just use salt and pepper as a base seasoning as it enhances the natural flavors of the chicken without overpowering them. You can also use your favorite bbq rub. You'll want to grill the chicken for approximately 20 minutes flipping half way through.
Applying BBQ sauce at the end of the grilling process is a strategic choice. This method prevents the sugars in the sauce from burning, which can occur if applied too early. Instead, basting the wings with BBQ sauce during the last few minutes of grilling allows the sauce to caramelize slightly, creating a rich, flavorful glaze. The ideal basting time is approximately 5 to 10 minutes before removing the wings from the grill. If you prefer you can pull the wings off and just toss with bbq sauce or hot sauce.
I usually make 2 lbs of wings and they are all gone by halftime! Enjoy!
