
Stuffed Jalapeños

I couldn't choose between recipes so took tips from several recipes. To start off you will need to get that smoker going at 225 degrees.
Then you'll need the following:
6 large jalapeños
4 oz cream cheese softened
1/4 cup pepper jack cheese
1/4 cheddar cheese
1 lb bacon (thin, not thick cut)
Next, slice the jalapeños lengthwise and deseed them. Set aside.
Make the cream cheese mixture by combining all the cheeses. Then, spoon a little bit of cream cheese into each jalapeño. Don't overfill or you'll have a mess when you're grilling them. You may have filling leftover so don't stress if you do.
Next, wrap each jalapeño with a whole piece of bacon. If needed, secure with a toothpick.
Once the smoker is ready, place them on there for 30 minutes. I then transfer to my gas grill at 400 degrees to crisp up the bacon. You want to make sure the bacon gets cooked thoroughly and all the fat renders out. Otherwise, it will be hard to take bites of the jalapeño. Serve hot and enjoy!
