How do you prepare the ribs for smoking?
Start by cutting the ribs into single pieces for easy handling and even cooking. Season the ribs generously with your favorite dry rub to enhance the flavor profile. I personally just use salt and pepper, but use your favorite rub.
What is the smoking process for the ribs?
Prep your smoker at 225 degrees. I throw a chunk of hickory and cherry in with my lump charcoal. Place the seasoned ribs in the smoker for 1.5 hours at 225 degrees to infuse them with that delicious smoky flavor. You can flip them every half hour if you like, I don't and they come out great every time.
How do you finish the ribs for serving?
After smoking, transfer the ribs into a container and add 1/2 stick of butter and 1/2 cup of Joy's BBQ sauce. Cover the container and continue cooking for an additional hour to allow the flavors to meld together. I use the metal foil containers with lids, but can use foil to cover the pan, I'm all about easy clean up!
What is the final step before serving the ribs?
Once the ribs are cooked to perfection, you have two options for serving. You can either sear the ribs right away or you can hold them in the container until you're ready to serve, then sear and enjoy! Just crank the heat up to 400 degrees and sear away to get a nice caramelization with Joy's BBQ sauce. If you like your ribs dryer you may want to omit this step. You can also use a gas grill to sear your ribs as the smoke flavor is already infused in the ribs.
